Healthy Bang Bang Chicken Rice Bowl Recipe From Leah Itsines


Dinner time at Leah Itsines’ house often involves feeding far more people than her husband Mitch and daughter Gigi, with friends and family (we’re looking at you, Kayla!) often turning up for one of her famous home-cooked meals. 

Luckily, Leah always has plenty of crowd-pleasing recipes up her sleeves, such as this bang bang chicken rice bowl recipe that she can throw together in less than 30 minutes. Great for meal prep and impromptu family dinners alike, this one can be easily personalised to suit your own preferences by adding additional ingredients such as sliced avocado, edamame beans and corn.

Healthy Bang Bang Chicken Rice Bowl 

Servings:

Prep time: 15 minutes

Total time: 10 minutes 

Ingredients 

  • 125g cooked brown rice

  • 150g chicken thigh, chopped into bite-sized pieces

  • ½ small cucumber, sliced into ribbons (60g) 

  • 30g cabbage, shredded

  • ½ small carrot, peeled into ribbons (30g) 

  • 1 tsp olive oil (5ml) 

For the seasoning: 

  • 1 tsp ground paprika (2g)

  • 1 tsp onion powder (2g) 

  • 2 garlic cloves, minced (10g) 

  • 1 tbsp salt-reduced soy sauce (10ml)

  • 1 tsp brown sugar (5g) 

  • Sea salt and ground black pepper (to taste) 

For the Bang Bang sauce: 

  • 30g reduced fat Greek yoghurt

  • 1 tbsp sweet chilli sauce (15g) 

  • ½ tsp hot sauce (2.5ml) 

  • ½ tsp honey (2.5ml) 

  • ½ tsp lime juice, or sub with vinegar, (2.5ml)

Method 

  1. In a small bowl, add all ingredients for the ‘Bang Bang sauce’ and mix well until fully combined. Set aside.

  2. In another bowl, add chicken pieces and all of the dry seasonings. Add 2/3 of the Bang Bang sauce to the chicken and mix well. 

  3. In a small pan, heat a small drizzle of olive oil. Add the chicken into the pan and cook until nice and golden, and completely cooked through. 

  4. In a small serving bowl, add rice, cucumber, cabbage, carrot and chicken. Drizzle the remaining Bang Bang sauce over the top and serve. 

Leah’s note: Usually I make a larger quantity of the Bang Bang sauce that I can use over the week. It’s a super versatile sauce that works well in burgers and wraps and pairs nicely with fish, too! Feel free to multiply the quantity by as much as you need and store in the fridge to use as needed.
