We’ve currently got this Pistachio & Berry Overnight Oats recipe on high rotation, and it’s not hard to understand why. Combining the nutty combination of almond milk, peanut butter and pistachios with the sweetness of strawberries, blueberries and maple syrup, leave this one in the fridge to work its magic overnight before grabbing it to go in the morning.
Oh, and did we mention you can keep it refrigerated in an airtight container for up to five days? Breakfast for the week, sorted.
Pistachio & Berry Overnight Oats Recipe
Prep time: 5 minutes
Refrigerated time: 8 hours or overnight
Serves: 4
Ingredients:

2 cups rolled oats

2 cups unsweetened almond milk

3 tbsp pure maple syrup

¼ tsp sea salt
-
8 strawberries
-
200g blueberries
-
4 tbsp peanut butter
-
50g pistachios (finely chopped or crushed)
Method:

Place the oats, milk, maple syrup and salt in a bowl and mix until well combined.

Pour the oat mixture equally into four bowls or jars. Cover with plastic film or lids and place in the refrigerator to chill for at least 8 hours or overnight.

To serve, top with the berries, peanut butter, crushed pistachios and extra maple syrup, if desired.
